GABA Ali Shan Red, AA, 2025

A Taiwanese Gaba oolong tea produced in the high-altitude region of Alishan. During production, the tea undergoes a deep roasting process and subsequent fermentation under anaerobic conditions.

Appearance:

Small, tightly rolled, spherical balls of a glossy, coffee-chocolate color. When warmed by the breath, one can detect the characteristic Gaba acidity and dried fruitiness, along with a bready aroma with hints of cinnamon and sandalwood.

Taste and aroma:

The infusion is dense, amber-red in color, viscous, and has a spicy, warm aroma. The flavor is balanced, rich, and buttery, with sweet notes of vanilla, dried apricot, and raisins, subtle spiciness, and a slight acidity. It unfolds gradually, without astringency or viscosity, even when steeped strongly. The finish is light and spicy, with a slightly salty note and hints of fruity wood.

Effect:

The taste is concentrated yet relaxed. This tea quenches thirst, refreshes, and helps you concentrate and focus. It's an excellent choice for daily use. It's also a great introduction to Gaba Oolongs.

How to brew

Steaming

• Teaware: porcelain or clay teapot / gaiwan
• Water: 85-90°C
• Ratio of dry tea leaves: 4-5 g. per 100 ml water

Brew in short infusions of 10-30 seconds, gradually increasing the time by 5-10 seconds.

Infusion method

• Teaware: porcelain or clay teapot
• Water: 85-90°C
• Ratio of dry tea leaves: 5 g. per 250-300 ml of water

Infuse for 3-4 minutes
